“FRIED” Chicken
For the first time in a while, we had a very slow weekend with plenty of time for me to get in the kitchen and make a mess. What was on the menu? Fried chicken, of course!
I use Simple Mills crackers as the breading which makes it absolutely delicious! I’ll just jump right in and give you the step-by-step:
- Start with a thawed bag of Organic Chicken breasts
- Lay them between two pieces of parchment paper and use a cast iron skillet to press down and flatten the breasts so they are all similar in thickness
- Melt a stick of butter in a bowl
- Crush up 2 boxes of Simple Mills crackers and put them on a plate. I like to use one box of Rosemary and one box of the Sea Salt
- Heat avocado oil over the stovetop on Medium heat in a large skillet. I prefer my Caraway dishes instead of the cast iron skillet for this particular dish.
- In an assembly line, dip a piece of chicken in the butter and then dip it onto the plate to coat the breast with the cracker crumbs.
- I usually like to start with the thickest breast so that they have a bit more time to cook while I am adding the other pieces to the skillet.
- Cook approximately 4-5 minutes and then flip over the breasts.
- Cook another 3 minutes or so and then use a meat thermometer to check the temps. I try to pull them as soon as I hit 165 degrees multiple times in different part of the breast because they will cook a bit more.
This dish is one of my family’s favorites and after having it this last time, we decided we need to have it more often!
